Little Indian Kitchen- Potato Salad
Manju Mahli has the perfect quick recipe to enjoy after a long day.
- Heat pan on a medium heat
- Tip in butter
- Add potatoes (peeled and chopped)
- Fry until crispy on the edges
- As begging to brown, add coriander, cumin, fresh green chillies
- Cook for a few minutes and transfer into a bowl
- Let cool
- Add chopped coriander leaves
- Add spring onions
- Add carrot ribbons
- Serve with chutney and yogurt
